Just so no one else wastes time with this: In the version of Generic Setup currently used in Plone 4.3.3 (1.7.4) it's not possible to remove a single behavior.
I tried setting the attribute remove="true" on the element value="plone.app.multilingual.dx.interfaces.IDexterityTranslatable" in the property name="behaviors", but that resulted in
